Just tried a test purchase for $1.00 as suggested by the getting started materials and received a notice that $.81 was deposited to my bank account. So, Square takes out 19% of a purchase?

It sounds like you entered the card number manually instead of swiping. Manually entered would be 3.5% + 15 cents.
