Welcome to the Community.
Do you have other employees for your business? You can set up a service to an employee and it will only be available during their schedule.
The only other option would be to turn off automatic appointment approvals, if you have those selected. It would give you the power to approve all appointments. You would do this in your Dashboard under Appointments > Settings
