Technical Support on Weekends? Is 3GB Enough?

We are farmers with an outdoor orchard and pick-your-own business.  We do about 150 swipes-a-day on the weekends.  What type of technical support would be available to us on the weekends should we encounter a problem. 

Also, does 3GB of data/month on our phone sound like enough data?
