Turn inactive categories off

Hello!

With the introduction of the Appointments app, and editing a service ticket to add new items - we have discovered that the app brings up the library of categories and item that are in the system - which we don't understand when you can access the checkout option - but regardless, with the library list coming up, we currently have deactivated the items that are not to appear in the library via Shopventory. However, what we are now left with are a list of categories. We do not see the items that should be appearing in the library. Additionally, we need the ability to deactivate certain categories from appearing in the library because they are no longer in use but are being kept for sales data purposes. If I remove items from each category - leaving a category with no items, will it 1) remove itself from the library list, and 2) will it maintain sales data information?
