gift cards in person AND online (woocommerce)?

Can Square gift cards (electronic or physical) be used for payment in the woocommerce-square plugin?

It’d be great if they can as we’re looking to sell gift cards coming up to Christmas for use in our website or at our store - and we want one elegant solution to handle all situations.

Yes.  However, currently it requires some modification to the plugin by adding in the code for an additional payment method that is a copy of the credit card payment method with the fields for Expiration Date and CVV removed.  You can test this by paying with a Square Gift Card in the credit card checkout area in woocommerce and put the gift card number in the CC Number field, any expiration date in the future, and any  cvv code.   You will find that it processes successfully and when you check the balance on the Square Gift Card, the balance has now been reduced by the amount that was just paid.

Further modification on the custom payment method would be required to allow for split transaction.  For example, if the customer checkout total is $100 but the gift card has $25 on it, a split transaction processing method would be required to allow for the gift card to be paid first, and then the remaining balance on another card.

These are all features that I am in the process of developing.  Although, the split transaction is the most challenging.
