At the moment, there isn't a quick way to swap your shop-based site for a normal site once you've activated your account. The only way to switch is to create a new account and go through the flow again to select the normal site option.
That's obviously a lot of effort so a workaround would be to turn off order acceptance and remove the store pages. You can still add text and image elements along with contact form so customers can still get in touch with you.
