When taking a payment it won't process until an email is entered. Is there away the remove this default as I have many elderly clients that don't have emails, so mobile no option is best .

An email is not required to process a transaction using Square, but can be entered to send a receipt at the end of the transaction - it can also be skipped though, so it's not a required field!
Is it possible you're referring to another POS function here such as the customer directory, invoices or appointments?
