Every so often we get a payment dispute and we usually lose them even with video camera evidence and all. We were wondering if it would be okay to disabled signatures for credit card sales, but we don't want to disable them if it significantly reduces our chances of winning a dispute.

Yes, credit card signatures can certainly help. Also, here is a Support Article with some tips on preventing disputes.
Ultimately, it's the bank's decision when it comes to disputes.
