When I check out a client it doesn’t give me the option to mark check out with cash instead it only tells me to charge ... so I can’t keep track of my earnings

If you are doing so from the Dashboard once you click on the appointment>take payment it should give you an option like shown below to record cash/check etc.
It you are doing so from the app, you will still tap the "charge" button and then it should give you the option to record a payment as cash or charge a card.
