How do you set taxes to add the tax to the total of the sale instead of each item with its own tax?

We have a small coffee shop.  A customer mentioned to us that the taxes on items seems to be higher than normal. When we looked into it, with the two options that Square gives you, they are both confusing.  The question I have............how to set up the tax amount and have it added to the total amount of the sale instead of each individual item.  The current options are to have the tax added either adds the tax on a separate line for each item OR the combine price of the item plus tax.  Seems as if the customer is getting charged much more instead of paying one tax for the entire sale?  Thanks

I don't see a way to set it up so that tax is only calculated on the entire sale amount.  That wouldn't work for our business anyway, as we sell some items that aren't subject to sales tax.
