I created a loyalty program to phase in once my physical punch cards run out, but I'm not ready to use it. I am not seeing a place to delete the loyalty program. I also have no "loyalty" category in my POS settings, which could potentially solve the problem. Any help is appreciated!

Welcome to the Seller Community!
Glad to hear you'll be taking advantage of the Loyalty features with Square. In the settings of the Point of Sale app, there should definitely be a Loyalty tab that you can navigate to. Try reinstalling your app to make sure you're running the latest version.
You can toggle the Loyalty screen from there, and toggle it back on when you're ready to use it.
