Hey everyone,
So I live in an area with a lot of older people owning cash-only businesses who have no knowledge of merchant accounts and are losing half their business not accepting credit cards. They choose to be cash only because they can't be bothered with understanding such newfangled technology.
My question is, what is the legality of managing other people's Square accounts and encouraging them to sign up for Square for a finder'a fee or subscription based payment model where I handle all the things they can't understand.

Sounds like you'll just be an independent contractor. Make sure to get your scope of work in writing (preferably a contract) to ensure that you have authority from said company. Also make sure that they send you a 1099 MISC in the event you are paid over a certain amount.
