Un-Categorized Charges

We have a problem with our sales; all of our items are in categories, however when pulling the sales report at the end of the day, we see quite large amounts in our un categorized section. We need to know how to either find what is causing this to ring up this way, or what setting needs to be fixed, etc

are they items that are uncategorized, or dollar amounts that are uncategorized?  If it is the later then it is because someone is typing in the price of an item rather than choosing an item from the list of entered items.  If it is an item that is uncategorized then that means you need to find that item and get it into a category.
