When adding categories do we need to add them on each device that is using square?

Nope. The categories & items showing on your dashboard will show up on your devices in your store. Not sure about multiple locations though.

Well said, @ThierrLRC! Also, categories are specific to each location's item library. If you have a multi-location setup, you'll first need to select your desired location from your online dashboard, then you'll be able to edit categories and items.
