Different services might require different information to be generated and/or requested from the customers.
For example, new client/patient appointments might want to require an address or a date of birth, but that might not be required for existing client/patient.
New client/patients might need emails that show "how to find the office", or "what to do before your appointment", or "fill out our online intake form" that would not need to be included in existing client/patient emails.
You may want new client/patient appointments to require appointment protection, but maybe not for existing client/patient appointments.
You may want a different reminder schedule based on the service itself.
The settings for appointments should be inside the services themselves (or at least the ability to override defaults). With a default settings set under the appointments tab.
