We need a way to make a category non-discountable because we sell memberships and these are non inventory items that should not be getting discounted.

Making a category non-discountable is not doable, but Restricted Discounts with Team Management might work for your memberships. Whenever a membership item is added to checkout, a 4 digit passcode is required before a discount is applied.

Same. Our members receive a discount on all merchandise. We had a visitor purchase a membership at the same time as merchandise, and applying the discount gave them a discount on the membership as well as the merchandise. We can do a work-around in future by selling the membership as one transaction, and then selling the merchandise with the discount, but that's not very "customer friendly". Designating an item as non-discountable would be an ideal way to avoid this.
Yes this.... can't believe Square hasn't figured this out yet.
