Hi I’ve just figured it out it now.
I was getting a server error when I logged in so I left it a few hours. The server seems to be back up now and the problem was caused because the delivery option has now moved to under the fulfilment menu option.
I had to go in under the new fulfilment | delivery menu item (which was not visible before) and re-enter my send from location and then all my shipping profiles thankfully reappeared.
