Hello!
We are running a promo that is a haircut and a beer for $30 - tax included. When we ring in the sale, the total comes to say, $33.56 - and we need to discount the total of the bill by $3.56. The system, however, when we apply a manual variable manager's discount, the system reduces the item costs, then recalculates the taxes - and the total then is not the $30 as we expected. This seems like this should be simple and uncomplicated but we have yet been able to figure out how to do this. Please advise.

Discounts are applied before taxes. Unfortunately, there isn't a way to adjust that. Sorry for the inconvenience!
I would consider giving our Support Team a call to ensure that the discount you're creating is set to the correct percentage or amount to ensure the right calculations. Thanks again!
