Is there a feature to nest service categories?

There was a nesting feature in Shedul's services

Whereas here I cannot find any option to do so

If this is not currently a feature is there any plans on it in the future?

I think that would make for a great feature request for Square Appointments! I've gone ahead and moved your post to the features section of the Seller Community.
