At this time, you can only edit your business hours in the Locations section of the online dashboard. Once you save your changes, the updated information will show up on your page based on the theme you've selected.
That being said, I can see how having the option to edit your store's hours directly in your store editor would help make the process more efficient. Rest assured that I'll be sharing this with our product liaison team, and please don't hesitate to come back with any other insight!
