How can item in online store be automatically deleted once sold?

I'm new.  All my items are one-offs.  I thought that when an item in my online store is purchased that it would automatically be eliminated from the store.  Not so, most likely because of something that I'm not understanding and need to do.  My site is live and I'm participating in a virtual craft fair now and am concerned about two people trying to buy the same item.  Do I have to manually go in and delete each item when sold?  Many thanks for any responses!

HI, I believe you need to activate the inventory tracking.  Even though you only have 1.  With 1 in inventory when it sells it then displays Out of Stock.  If no inventory tracking on item, the system believes there is unlimited stock and it will not display Out of Stock when the 1 item is sold.
