...but I dont want to lose my current inventory library? Is there a way I can go about setting up a fresh item library?

What I would recommend is to Export your current Item Library to Excel.

Once you have it, you can add and delete items as you need. Since you're working with a template, you'll be able to see all the things you need to add to make the Import go smoothly. Save the new file then Import it back to Square.
