How do I set only appointments that are 4 hours or longer where they can’t book same week? For anything under 4, I’m fine with them being same week but bigger pieces I need more than a few days time to draw it up.

It sounds like you are asking for appointment lead times, similar to this request:

This is a great feature request, as some services definitely need more time to prepare than others.
One way you can address it for now is by having a statement on the website explaining lead times.
