You'll want to start navigating your Squareup.com Dashboard to see all the options you have with your Item Library.  

You can set your Items and Items Pricing on your Dashboard as well as set your variable pricing and save it so it appears in your Dash. You are also able to set pricing from the Items tab of the App as well, but I personally find the Dashboard is the easiest way to navigate and set up your Items.
