Having the option to set reminders to send on the Monday following the due date would be more effective when sending invoices to businesses, rather than using the default settings.
Everyone uses invoices differently so being able to schedule reminders for xx amount of days after an invoice is sent/past due etc is more of the "rounded" option to fit everyone.
I would post this suggestion in this thread, and maybe this can become a feature down the road.
