Pre-order settings fulfilment window issue

I have a range of holiday themed treats I want to start pre-selling now with customers able to pick up only from 30 Nov through to 7 Jan. I have already set up the item prep time to be 48 hours, which is enough notice for our team to create the product during the holiday period I want the items collected during. I don't want any more new orders to come through after 22 Dec because we will be finishing the offerings. When I try to specify that in the pre-order parameters, it errors out and requires me to have a cut off day before my item is even available for collection. Meaning, I'd have to have all orders in by 29 November for collection 30 Nov through Dec and early Jan? This is really problematic for longer range sales periods, such a the holidays, when I want orders to continue to come in. Is there a fix or a work around please?
