Just curious, do you sell your cakes online ? We live in Colorado - at 9600' - you can't make a decent cake at this altitude (cakes are oily and nothing like what you can get from lower altitudes - most recipes give you tips for altitudes at 3500' but, at 9600 and up, it's a crap shoot - trust me, we're from PA and those folks can make seriously great cakes.
