Gaining Customer Insights from Fundraisers

Hello, I am hosting fundraisers at my restaurant and I want to know the best way to flag each sale from the organization. At first, I created a customer profile with the name of the organization, however, I still want the ability to have them enter their information and add them individually to my customer database. I am also wondering how I can find how frequently they visit after the fundraiser to see if we are building repeat business from the fundraisers.

We created a $0 item called Fundraiser; and add it to the sale during the fundraiser. 
But we just use it to see show many transactions during the fundraiser were from people referred by the organization. 

Alternatively; you can create a Customer Group for each Organization, and add create customer profiles & add each customer to that Group so you can then track them that way. 

But there doesn’t seem to be a perfect solution.
