How to change the Categories that are displayed at the bottom of the iPad POS

How do you change the categories that are listed at the bottom of the square POS on iPad?  I've deleted several categories but they still appear at the bottom of the screen.  I need to change out for my new categories.  Thanks.

Any chance you could screenshot the area you're talking about with these categories so I can get a better idea?
