New category Not Showing Up

I've now added the same category about 3 times. Each time I go back and the image is gone as well as the SEO info.

I have now done it yet again and have added an item but it's not showing up.

I have gone back over every box to check to no avail. 

I did check the forums and the last entry was in 2021.
