I use the Square invoice feature for my catering business. Each event is in a different location so I have several tax settings. Today when I went to customize tax settings it only shows 2 of the 5 tax settings I have. I have tried deleting the item and recreating the item with the 5 tax settings. I have tried logging out and different browsers. No luck.

If you go back in to Items>Sales Tax from your Dashboard and then select a Sales Tax, Could you then select the Apply to Items on the right hand side of the sales tax, and then toggle the select none and then select all and then click the Apply to Items button at the bottom and see if that clears the issue?
Additionally I would follow those steps to each tax that you have setup as well before trying to create an invoice to test.
Let me know if this resolved the issue, or if you are still unable to select the tax.
