I have a United States business that is expanding to international customers. I have a customer who has requested to order product from my store, but they are in Canada. Is there any way for me to either create and send an individual invoice or for them to pay through my online store?

Welcome to the Community!
It's a little weird to explain, but you definitely can. You will send them an invoice in USD and you'll receive your funds in USD. The customer will have their funds removed in CAD. Whatever the exchange rate at that time of payment, will be the responsibility of the customer.
In my experience - they card company or bank will charge them an "exchange fee".
